This Week’s Recipe: Vegan Pumpkin Burgers

Burgers are often the first choice for lunch or dinner for many people, especially after a long tiring day. The reason why is simple, it is fast and easy to make. Burgers, however, are often deemed unhealthy when purchased at the closest fast food store. For that reason, we have chosen a vegan burger recipe but do not forget, you can always make it your own. If you are like me after a long day at work and cannot wait too long for your dinner to be ready, make a note of the following recipe.

The Pumpkin burger recipe is easy to make, and it takes approximately 15-20 minutes.

Ingredients: ½ cup diced red onion (or white)

½ cup diced red pepper

Some garlic

1 tsp salt

¼ cup sweetcorn

3 tbsp mashed pumpkin

1 cup breadcrumbs

+ ingredients of your choice

Step 1: Dice the red onion (white onion), red pepper and garlic. Heat oil over medium heat, then add the ingredients above and the sweetcorn for 3 minutes.

Step 2: Mix the vegetables, pumpkin and breadcrumbs together until the mixture has the desired consistency. For the next part, you can use gloves if you like but it is not necessary. Form 4 large patties out of the mixture and place it in the refrigerator for a few minutes.

Step 3: Turn the grill on for about a medium heat, then place the pumpkin burgers in for 3-5 minutes.

Step 4: Remove the burgers and place it in your favourite roll.

Step 5: Enjoy the meal

You can add other ingredients, such as: avocado, tomatoes and potatoes.
